Ingredients:
- 3 tablespoons butter
- 2 leeks, white and light green parts, sliced
- 3 cloves garlic, minced
- 4 cups diced potatoes
- 4 cups chicken or vegetable broth
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup heavy cream
- Fresh chives, chopped, for garnish
Directions:
- In a large pot, melt the butter over medium heat. Add the sliced leeks and minced garlic. Sauté until the leeks are soft and translucent, about 5 minutes.
- Add the diced potatoes, chicken or vegetable broth, bay leaf, dried thyme, salt, and pepper. Bring to a boil, then reduce the heat to low and simmer for about 20-25 minutes, or until the potatoes are tender.
- Remove the bay leaf and discard it.
- Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a blender in batches, then return it to the pot.
- Stir in the heavy cream and heat the soup over low heat until it’s warmed through.
- Taste and adjust the seasonings if needed.
- Serve hot, garnished with chopped fresh chives.
