  • 3 tablespoons butter
  • 2 leeks, white and light green parts, sliced
  • 3 cloves garlic, minced
  • 4 cups diced potatoes
  • 4 cups chicken or vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup heavy cream
  • Fresh chives, chopped, for garnish


  1. In a large pot, melt the butter over medium heat. Add the sliced leeks and minced garlic. Sauté until the leeks are soft and translucent, about 5 minutes.
  2. Add the diced potatoes, chicken or vegetable broth, bay leaf, dried thyme, salt, and pepper. Bring to a boil, then reduce the heat to low and simmer for about 20-25 minutes, or until the potatoes are tender.
  3. Remove the bay leaf and discard it.
  4. Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a blender in batches, then return it to the pot.
