- In a large mixing bowl, cream together 1 cup butter, 3/4 cup sugar and 1 cup brown sugar. Add 2 teaspoons vanilla, 2 eggs and 1 1/2 cups of the peanut butter and mix well.
- Add 1 1/2 cups oats, 2 cups flour, 1 teaspoon baking soda and 1 teaspoon salt. Stir until combined.
- Spread dough on baking sheet and bake for 13-15 minutes, or until a toothpick comes clean (be careful not to over-bake).
- Melt remaining 1 cup of peanut butter in a microwave safe bowl for 20 seconds. Then spread over the bars. Allow bars to cool completely (you can place in the refrigerator for 15 minutes).
