- Allow the potatoes to cool for 15-20 minutes, or until they are cool enough to handle.
- When cool enough, use a sharp knife to cut each potato in half, horizontally. Scoop out the insides of each sweet potato, discarding the skins. Place the cooked sweet potatoes into the bowl of a food processor (about 4 1/2 cups potatoes).
