Jammie Dodger Cookie Sandwich Recipe Guide

A Sweet Little Secret

I have a soft spot for cookies with a window. Seeing that little peek of jam just makes me smile. These Jammie Dodgers are my favorite project for a cozy afternoon. The dough is like a soft, sweet blanket.

It wraps the jam in a warm hug. Making them feels like a small, happy adventure. I think everyone deserves a little edible sunshine. What is your favorite cookie to bake when you need a smile?

Making the Dough

Creaming the butter and sugar is the first magic step. You beat them until they look pale and fluffy. This makes the cookie tender. I always sneak a taste of the dough at this point. It’s a cook’s treat!

Then you mix in the eggs and vanilla. Doesn’t that smell amazing? It smells like my grandma’s kitchen. Chilling the dough is very important. It makes it easier to roll out and cut. This matters because it keeps your heart shapes perfect.

The Heart of the Matter

Rolling out the dough is the fun part. I use a floured surface and my trusty rolling pin. You need two cookie cutters, one big and one small. Cut out a big heart first. Then use the small one to cut a window in the center of half of them.

I once used a bottle of wine to roll the dough. My grandson thought that was so funny. I still laugh at that. *Fun fact: The first Jammie Dodgers were made in the 1960s!* Have you ever used something funny as a kitchen tool?

A Quick Bake and a Cool Down

The cookies bake fast, so watch them closely. They are done when the edges are just golden. Let them cool on the pan for a bit. Then move them to a rack. This matters because if they are warm, the jam will melt and get messy.

Waiting for them to cool is the hardest part. The smell fills the whole house. It makes everyone gather in the kitchen. I love that part the most. It’s not just about the food, it’s about the people.

The Final Touch

Now for the best part, the assembly! Take a solid heart cookie. Spread a thin layer of strawberry jam on it. Gently place a windowed heart on top. The red jam winks through the little heart shape.

Finally, dust them with a snowy shower of powdered sugar. They look so pretty and taste even better. Which jam would you try in yours? Raspberry or apricot? I’d love to know your pick.

My Jammie Dodger Cookie Sandwiches

Hello, my dear! Let’s bake some magic today. We are making Jammie Dodger cookie sandwiches. They are buttery cookies with a sweet, jammy heart. I love seeing the red jam peek through that little window. It always makes me smile. My grandson calls them “love cookies.” Isn’t that the sweetest thing? I think so, too. Let’s get our hands a little dusty with flour. It’s going to be a lovely time.

Ingredients

  • Soft Butter
  • Sugar
  • Eggs
  • Milk
  • Vanilla Extract
  • Flour
  • Baking Powder
  • Jam of your choice
  • Powdered Sugar

Instructions

Step 1: First, we make our cookie dough. Cream the soft butter and sugar together until it’s fluffy. It should look like a pale, happy cloud. Then, mix in the eggs, milk, and vanilla. The vanilla makes the whole kitchen smell amazing. I still laugh at the time I used salt instead of sugar. What a mess that was!

Step 2: Now, whisk your flour and baking powder in another bowl. Add this to your wet mixture in two parts. Mix it gently until it all comes together. The dough will be soft and a bit sticky. That’s perfectly normal. (A hard-learned tip: Don’t overmix! It makes the cookies tough.)

Step 3: Wrap your dough and let it rest in the fridge. It needs a little nap, about an hour. This helps the flavors get to know each other. It also makes the dough much easier to roll out later. This is a good time to wash the bowls. What’s your favorite kitchen chore? Share below!

Step 4: Preheat your oven. Roll the chilled dough on a floured surface. Use your big heart cutter to make two cookies. Then, use the small cutter to make a window in one of them. You’ll have a whole heart and a heart with a hole. Place them carefully on a baking sheet.

Step 5: Bake them until the edges are just golden. Let them cool completely on a rack. This part takes patience. The jam will slide right off a warm cookie. Once they’re cool, spread jam on the whole heart cookie. Gently press the window cookie on top. Finish with a snowy dusting of powdered sugar.

Three Tasty Twists to Try

Once you master the classic, you can have some fun. Try a different jam for a new flavor. My neighbor loves this part. She is always bringing me a new jar to test. Here are a few ideas to get you started. I think they are all wonderful.

  • Raspberry Lemon Zest: Use raspberry jam and add a little lemon zest to the dough. It’s so bright and cheerful.
  • Chocolate Orange: Add cocoa powder to half the dough. Fill them with orange marmalade. It tastes just like a fancy chocolate.
  • Peanut Butter & Jelly: Use a small amount of peanut butter in the dough. Then fill with grape jelly. It’s a lunchbox classic in a cookie!

Serving Your Cookie Sandwiches

These cookies are a treat all on their own. But you can make them extra special. Arrange them on a pretty plate for tea time. They look so lovely next to a pot of tea. For a fun party, stack them high on a cake stand. Everyone will gather around it. I promise.

What should you drink with them? A cold glass of milk is always the best friend to a cookie. For the grown-ups, a cup of hot tea or a sweet dessert wine is just perfect. The wine makes the jam taste even fruitier. It’s a nice little treat after a long day.

Keeping Your Jammie Dodgers Happy

These cookies are best eaten in two days. Just keep them in a tin at room temperature. You can also freeze the dough for a busy day.

Roll the dough into a log before you chill it. This makes slicing so easy later. I once forgot I had dough in the freezer. Finding it felt like a sweet surprise.

Batch cooking saves you time and energy. It means a fresh treat is always close by. This matters for busy families needing a quick smile.

Have you ever tried storing it this way? Share below! I love hearing your clever kitchen tricks.

Simple Fixes for Cookie Troubles

Is your dough too sticky? Just add a little more flour. Your hands work best for mixing it in. I remember when my first batch spread too much.

Are the cookies browning too fast? Your oven might be too hot. An oven thermometer helps a lot. Fixing this makes your cookies look perfect.

Is the jam leaking out? Use a thinner layer next time. This keeps the sandwich neat and tidy. Getting it right builds your cooking confidence.

No bake chocolate oatmeal cookie bars mix chewy oats and rich chocolate for a quick and easy homemade treat. You can make them fast with pantry staples and chill them in the fridge—no oven needed.

Ingredients

Instructions

  1. In the bowl of a stand mixer fitted with a paddle attachment or a large mixing bowl with an electric hand mixer, cream together the butter and sugar until light and fluffy. Beat in the eggs, milk and vanilla.
  2. In a separate bowl, whisk together the flour and baking powder. Add half of the dry ingredients to the wet mixture, blend well and then add the other half.
  3. Cover and refrigerate the dough for at least 1 hour, but no longer than 24 hours.
  4. Preheat oven the to 375°F. Line a baking sheet with a silicone mat or parchment paper.
  5. Turn the dough out onto a floured surface. Using a rolling pin or clean wine bottle, roll to 1/4 inch thick. Cut out two large hearts. In the center of one large heart, cut out a smaller heart. Transfer one whole large heart and large heart with center removed to a parchment lined baking sheet. Continue until no dough is left. I used a 4 and 3 inch cookie cutter.
  6. Bake each batch for 7-11 minutes (time will vary greatly depending on how large your cookies are).
  7. Allow the cookies to cool for 10 minutes on the baking sheet, then remove to a cooling rack and allow to cool fully.
  8. After the cookies have cooled, spread a thin layer of strawberry jam on the large cookie, covering the whole thing.
  9. Top with a cut-out cookie and sprinkle with the powdered sugar.
