Savory and Sweet Christmas Cookie Bites

My First Bite of Bacon Cookies

My grandson made a face when I told him. “Bacon? In a cookie?” He was not sure at all. But he tried one warm from the oven. His eyes got very wide. Then he reached for another. I still laugh at that.

It is a funny mix, I know. But trust an old kitchen grandma. The salty crunch with the sweet peanut butter is magic. It is a happy surprise in every bite. Have you ever tried a sweet and salty mix like this?

Why Mixing Flavors Matters

Food should be a little adventure. It wakes up your whole mouth. Sweet is nice. Salty is good. But together? They sing a much better song.

This matters because cooking is about joy. It is about making memories, not just food. A silly cookie can make people smile and talk. That is the best part of any recipe.

Let’s Get Baking Together

First, cook your bacon until it is crispy. Let it cool on a paper towel. Doesn’t that smell amazing? Mix your dry stuff in one bowl. The flour, salt, and baking soda.

Now, the fun part. Beat the sugars and melted butter. Add the eggs and vanilla. It will look glossy and rich. Then mix in the dry stuff slowly. Finally, stir in your treasures: the bacon and Reese’s Pieces.

A Little Cookie Secret

Here is my tip. Wet your hands with cold water before rolling the dough. The dough is sticky. Wet hands keep it from sticking to you. Roll them into big balls, then flatten them a bit.

*Fun fact: The cookies will look pale and soft when you take them out. That is perfect! They keep baking on the hot tray. This makes them chewy inside. Let them cool for a few minutes. Then try one warm. Is your family a chewy cookie family or a crispy one?

Sharing the Story

My neighbor Mrs. Finn brought this recipe to me. It was on a stained index card. She said her father made them for Christmas. He was a farmer who loved peanut butter and bacon sandwiches.

So this cookie is really a sandwich in disguise. I think that is so clever. Food always has a story. It connects us to people. What is a recipe that tells a story in your family?

Instructions

Step 1: First, get your oven ready at 425 degrees. Cook your bacon pieces until they are nice and crispy. Let them cool on a paper towel. This next part is important. Mix your flour, salt, and baking soda in a bowl. (A hard-learned tip: Let that bacon cool completely, or it will make your dough greasy.)

Step 2: Now, let’s make the cookie base. Use your mixer to beat the brown sugar, melted butter, and white sugar together. It will look a bit sandy. Then, add in your eggs and vanilla. My kitchen smells amazing already. Beat it until it’s all smooth and happy.

Step 3: Turn your mixer speed down to low. Slowly add your flour mixture. Mix just until you see a few flour streaks. Then, the fun part! Toss in the Reese’s Pieces and your crispy bacon. I still laugh at how surprised people look. Mix until everything is tucked into the dough.

Step 4: Time to make your cookie balls. Scoop the dough into big portions. Roll them between your wet hands. This keeps the dough from sticking. You should have sixteen lovely dough balls. Sweet or salty—which part are you most excited to taste? Share below!

Step 5: Place eight balls on each baking sheet. Gently flatten them with your hand. They should be about ¾-inch thick. Don’t crowd them. They need space to become perfect.

Step 6: Bake one sheet at a time. They only need 8 to 10 minutes. The centers will look soft and blond. Trust me, they will finish cooking as they cool. Let them rest for 5 minutes, then move them. Serve warm for the very best bite.

Creative Twists

You can make this recipe your own. Try using mini peanut butter cups instead of Reese’s Pieces. It makes a gooey surprise. For a different salty kick, use crushed pretzels with the bacon. My grandson loves that. Or, roll the dough balls in coarse sugar before baking. They will sparkle and have a sweet crunch. Which one would you try first? Comment below!

Serving & Pairing Ideas

These cookies are a full adventure. I like to serve them on a big platter. A little bowl of extra Reese’s Pieces for topping looks cheerful. For a drink, a cold glass of milk is the classic choice. It cuts the richness perfectly. For the grown-ups, a creamy bourbon-laced eggnog is a cozy match. The spices dance with the bacon. Which would you choose tonight?

Keeping Your Cookie Bites Happy

Let’s talk about keeping these treats tasty. They are best warm, right from the oven. But you can save them for later. Let them cool completely first. Then, pop them into an airtight container. They will stay soft on your counter for three days.

You can freeze the dough or baked cookies. I love freezing dough balls for a quick treat. Just flatten them first and freeze on a sheet. Once frozen, bag them up. Bake straight from the freezer, adding a minute or two. I once forgot I had a batch frozen. What a lovely surprise on a busy Tuesday!

Batch cooking like this saves precious holiday time. It means more moments for stories and laughter. Have you ever tried storing cookie dough this way? Share below!

Simple Fixes for Common Cookie Hiccups

Even grandmas have kitchen troubles sometimes. Your cookies might spread too thin. This often means your butter was too warm. Make sure your melted butter has cooled a bit before mixing.

If your cookies are too cakey, you may have over-mixed the flour. Stop mixing when you still see a few white streaks. I remember when my first batch was like little cakes. We still ate them, of course! Getting the texture right matters. It gives you that perfect chewy bite with a crispy edge.

Is the bacon getting soggy in the dough? You must let it cool completely after cooking. Pat it very dry with paper towels, too. This keeps your cookie wonderfully savory and crisp. Which of these problems have you run into before?

Your Quick Questions, Answered

Q: Can I make these gluten-free? A: Yes! Use your favorite 1-to-1 gluten-free flour blend. The results are just as good.

Q: Can I make the dough ahead? A: Absolutely. Mix it, portion it, and chill for up to two days. This actually improves the flavor.

Q: What can I use instead of Reese’s Pieces? A: Chocolate chips work fine. Or use chopped peanuts for extra crunch.

Q: Can I make smaller cookies? A: Of course. Use a smaller scoop. Just bake them for less time, about 6-8 minutes.

Description

Loaded Peanut Butter-Bacon Cookies

Ingredients

Instructions

  1. Adjust oven rack to middle position and heat oven to 425 degrees. Line 2 rimmed baking sheets with parchment paper. Cook bacon in 12-inch nonstick skillet over medium heat until crispy, 7 to 9 minutes. Transfer to paper towel–lined plate and let cool completely. Combine flour, salt, and baking soda in bowl.
  2. Using stand mixer fitted with paddle, beat brown sugar, melted butter, and granulated sugar on medium speed until well combined, about 1 minute, scraping down bowl as needed. Add eggs and vanilla and beat until fully incorporated, about 30 seconds.
  3. Reduce speed to low. Slowly add flour mixture and mix until mostly incorporated but some streaks of flour remain, about 30 seconds. Add Reese’s Pieces and bacon and mix until evenly distributed throughout dough, about 30 seconds.
  4. Divide dough into sixteen 2½-ounce (71-gram) portions, about ¼ cup each. Divide any remaining dough evenly among dough portions. Roll dough portions between your wet hands to make dough balls.
  5. Evenly space dough balls on prepared sheets, 8 balls per sheet. Using your hand, flatten dough balls to ¾-inch thickness.
  6. Bake cookies, 1 sheet at a time, until centers of cookies are puffed and still very blond, 8 to 10 minutes. (Cookies will seem underdone but will continue to bake as they cool.) Let cookies cool on sheet for 5 minutes. Using spatula, transfer cookies to wire rack and let cool for 10 minutes. Serve warm.

Notes

For a crispier bacon texture, ensure it is cooked until very crispy and cooled completely before adding to the dough. Cookies are best served warm.
