<p class="wp-block-paragraph">Let&#8217;s make a simple, cozy soup. This one-pot harissa beet soup recipe is my new favorite. It turns your kitchen a wonderful pink color. I still laugh at that.</p>



<p class="wp-block-paragraph">You just cook everything in one pot. This makes it an easy beet soup for busy nights. It is a healthy beet soup, too. The beets and potatoes get so soft and sweet. Doesn’t that smell amazing?</p>


<h2 class="wp-block-heading">Why This Soup Matters</h2>


<p class="wp-block-paragraph">This soup is a complete vegetarian soup. It fills you up with good things. I think that matters. We all need meals that are kind to our bodies.</p>



<p class="wp-block-paragraph">Using one pot matters, too. It means less washing up. You have more time to sit and enjoy your food. That is a good life lesson, I think.</p>


<h2 class="wp-block-heading">The Secret is Harissa Paste</h2>


<p class="wp-block-paragraph">Harissa paste is the magic here. It is not too spicy, just warm. It makes this beet and potato soup special. My grandson calls it &#8220;the pink soup with a kick.&#8221;</p>



<p class="wp-block-paragraph">*Fun fact: Harissa comes from North Africa. It is often made with red peppers and spices.* Once, I used a little too much. My nose tingled! Now I use just two tablespoons.</p>


<h2 class="wp-block-heading">Don&#8217;t Skip the Creamy Yogurt Topping</h2>


<p class="wp-block-paragraph">The cool, creamy yogurt topping is a must. You whisk yogurt with a bit of garlic. It makes the soup taste rich and bright. It looks so pretty swirled on top.</p>



<p class="wp-block-paragraph">It turns this into a fancy meal. But it only takes a minute to make. Do you like to add toppings to your soup? I love the crunch from almonds.</p>


<h2 class="wp-block-heading">A Soup for Your Future Self</h2>


<p class="wp-block-paragraph">This is a wonderful make-ahead soup. I make a big pot on Sunday. Then I have lunch ready for days. The flavor gets even better.</p>

<h2 class="wp-block-heading">Instructions</h2>
<p class="wp-block-paragraph"><strong>Step 1:</strong> Warm your oil in a big pot. Cook the shallot and most of the garlic. It will smell so good. Stir in the harissa paste next. That&#8217;s the secret for a warm, cozy flavor. (A good tip: use a spoon to scrape all the harissa from the jar!) This easy beet soup starts with just one pot.</p>
<p class="wp-block-paragraph"><strong>Step 2:</strong> Now add your chopped beets and potatoes. Pour in the vegetable broth. This makes a wonderful vegetarian soup. Let it all bubble until the veggies are super soft. I love how the color turns a deep, happy pink. What&#8217;s your favorite colorful soup? Share below!</p>
<p class="wp-block-paragraph"><strong>Step 3:</strong> Time to blend! Be careful, it&#8217;s hot. I use my immersion blender right in the pot. Blend until your healthy beet soup is perfectly smooth. (Always let it cool a bit first for safety.) This one-pot soup is so simple and creamy.</p>
<p class="wp-block-paragraph"><strong>Step 4:</strong> Make the creamy yogurt topping. Mix yogurt with that last bit of garlic. A little salt makes it sing. Drizzle it over your beautiful beet and potato soup. The white swirls on pink are just lovely. Top with crunchy almonds and dill.</p>
