Step 1: Prepare the Brownie Layer
Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan with non-stick spray. In a medium bowl, combine melted butter, sugar, vanilla extract, and eggs. Mix until smooth. Bake the cheesecake in the oven at 325°F (160°C) for about 50-60 minutes. The edges should be set while the center remains slightly jiggly. Once done, turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 1 hour.
Step 4: Make the Caramel Sauce
In a saucepan over medium heat, combine sugar and water, stirring until the sugar dissolves. Once it starts to boil, do not stir. Let it cook until it turns a golden amber color. Remove from heat and carefully add butter and cream. Stir until smooth and let it cool slightly.
Step 5: Assemble the Dessert
Once the cheesecake is completely cool, pour the caramel sauce evenly over the top. Refrigerate for at least 4 hours, preferably overnight, to fully set.
Step 6: Serve
Carefully release the cheesecake from the springform pan. Slice and serve chilled, optionally drizzling additional caramel sauce on individual slices.
