Why The Pasta Water Is Secret

Do not pour out all your pasta water. Save that half cup. This is my best kitchen tip. The starchy water helps the sauce stick to the pasta.

Instructions

Step 1: Boil a big pot of salty water. Cook your bowtie pasta in it. Toss the broccoli in during the last few minutes. (Save a little pasta water in a cup before you drain it all.) Doesn’t that smell amazing already?

Step 2: Season your chicken pieces well. I use my favorite spices. Cook them in a hot skillet until they’re golden. Set them aside on a plate. What’s your favorite spice? Share below!

Step 3: Now, make the magic sauce. Melt butter in that same skillet. Add the garlic and let it sizzle. Stir in the mustard, lemon, and a pinch of red pepper. (Always zest your lemon before you juice it. It’s much easier!)

Step 4: Bring your family back together. Add the pasta, broccoli, and chicken to the sauce. Toss everything gently. Sprinkle in the Parmesan cheese and watch it get all creamy. I still laugh at how happy this step makes me.

Step 5: Dish it up while it’s warm. Top it with more cheese and fresh herbs. Serve it right from the skillet if you like. Dinner is ready, my dear.

Creative Twists

Swap the pasta for zucchini noodles.

    1. Cook the Pasta & Broccoli: Bring a large pot of salted water to a boil. Cook bowtie pasta according to package directions until al dente. Add broccoli florets during the last 3 minutes of cooking. Reserve 1/2 cup pasta water, then drain and set aside.
    2. Cook the Chicken: Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through, about 6–7 minutes. Remove and set aside.
    3. Make the Cowboy Butter Lemon Sauce: Lower heat to medium and add butter to the skillet. Once melted, add garlic and cook until fragrant. Stir in red pepper flakes, Dijon mustard, lemon juice, and lemon zest. Season with salt and pepper.
    4. Bring It All Together: Return chicken, pasta, and broccoli to the skillet. Toss to coat. Add reserved pasta water as needed. Stir in Parmesan cheese until melted and creamy.
