Step 1: Prepare the Filling
Peel, core, and slice the apples into small pieces. In a large mixing bowl, combine sliced apples with sugar, cinnamon, nutmeg, and lemon juice. Mix well and let it sit for about 10 minutes until the apples soften slightly.
Step 2: Cook the Filling
In a large skillet over medium heat, add the apple mixture. Cook for about 5-7 minutes until the apples begin to soften. Remove from heat and let the filling cool completely.
Step 3: Assemble the Egg Rolls
Take an egg roll wrapper and lay it flat with one corner pointing towards you. Place a spoonful of the apple filling near the corner. Fold the corner over the filling, then fold in the sides, and roll tightly. Seal the top corner with a mixture of water and flour.
Step 4: Fry the Egg Rolls
In a deep skillet or fryer, heat oil to 350°F (175°C). Carefully add egg rolls in batches, frying for 2-3 minutes on each side until golden brown. Remove and drain on paper towels.
