There’s a reason smothered chicken is on every comfort food menu in America: the technique is foolproof, the ingredients are simple, and the result is deeply satisfying. You sear the chicken first to get a golden crust, then build the creamy vegetable situation in the same pan, then nestle the chicken back in and bake until everything is hot and bubbly. The chicken braises gently in the cream sauce while it finishes cooking, which keeps it incredibly moist and infuses it with all the flavors below.
The creamed spinach is the star. I used to think I didn’t like creamed spinach — it sounded like a sad, gloopy thing from a 1980s steakhouse. But the homemade version, with fresh garlic, real cream, and a generous handful of parmesan, is a revelation. Add mushrooms and bacon, and you’re in business.

The Chicken Situation

The recipe above has you wilt the spinach in the cream sauce, which works because the cream is already simmering and the heat evaporates the moisture quickly. Just don’t crowd the pan with too much spinach at once.
Fresh baby spinach is what you want here. It’s pre-washed, tender, and wilts in about a minute. Mature spinach from a bunch works too — just strip the leaves and discard the stems. Frozen spinach is a last resort, but if you use it, thaw it completely and squeeze out every drop of water before adding it to the pan.

Make-Ahead Tips
You can assemble the entire dish (chicken, spinach mixture, cheese, and bacon) in the skillet, cover, and refrigerate for up to 24 hours before baking. When ready to bake, let it sit at room temperature for 20 minutes, then bake as directed, adding 5 to 10 minutes to the cook time to account for the cold start.
Leftovers keep in the fridge for up to 3 days. Reheat gently in a 350°F oven covered with foil, or in a skillet over low heat with a splash of cream to loosen the sauce. I don’t recommend microwaving — the cream can break and the cheese gets rubbery.

- Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4 to 5 minutes per side until golden brown. Transfer to a plate and set aside.
- In the same skillet, cook the chopped bacon until crispy, about 5 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving about 1 tablespoon of bacon fat in the pan.
- Add the sliced mushrooms to the skillet and cook until golden, about 4 minutes. Add the garlic and cook for 30 seconds. Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom.
- Add the heavy cream, parmesan, onion powder, and red pepper flakes. Simmer for 2 to 3 minutes until the sauce thickens slightly. Add the fresh spinach and stir until wilted, about 1 minute.
- Return the chicken breasts to the skillet, nestling them into the spinach mixture. Spoon some of the sauce over the top. Lay a slice of pepper jack or Monterey jack cheese over each chicken breast, and sprinkle the reserved bacon over the cheese.
- Transfer the skillet to the preheated oven and bake for 10 to 12 minutes, until the chicken is cooked through to an internal temperature of 165°F and the cheese is melted and bubbly.
- Garnish with fresh parsley and serve immediately with mashed potatoes, rice, or crusty bread to soak up the sauce.
